Ingredients:
- Pork belly – 600 g (1.32 lb.)
- Garlic (sliced) – 3 cloves
- Black pepper (ground) – 1/2 tsp.
- Rosemary – 1 tsp.
- Salt – 2 tsp.
- Ginger (sliced) – 30 g (1.06 oz.)
- Bouillon cube – 1 PC. (classic flavor)
- Cooking oil – 1 liter
Dipping ingredients:
- Lemon juice – from 1 PC.
- Garlic (minced) – 2 cloves
- Salt – 1/4 tsp.
- Soy sauce – 1/2 tsp.
Directions:
- Bring to a boil a large measure of water in a large pot.
- Add pork, salt, sliced garlic, pepper, rosemary, ginger, bouillon cube and simmer for 30 minutes. (adjust boiling time according to thickness of meat)
- After boiling the meat, dry it well with paper towel, if necessary, pressing it to release excess liquid.
- Heat the oil in a deep pot, fry the pork until golden brown (cover with lid or splash shield).
- Add very carefully but with a quick action 1/4 cup water into the oil 2 minutes before removing from the pot (see video for reference) and immediately cover with splash shield.
- After 2 minutes, drain from excess of oil, slice and serve with a dipping sauce.
Tip: Dry well the meat after boil will avoid dangerous splashing of hot oil during frying



Hi Peachy, After boiling the pork, can I put it in the oven instead of frying? If so, what will the temperature be and for how long? Thanks a lot.
In my opinion, since the purpose is to make it crisp, I suggest to oven cook on a grill at 120/130 degree Celsius for one hour (flip every 15min) or until you reach the desired result, share to all of us the result so you can be in help to other readers. Thank you for watching Davide
