Ingredients:
- Mussels – 1 kg (2.20 lb.).
- Coconut milk – 400 ml (13.53 fl.oz.)
- Garlic (sliced) – 5 cloves
- Ginger (sliced) – 40 g (1.41 oz.)
- Lemongrass (sliced) – 2 stalks
- Chili – 2 PCs.
- Kaffir Lime leaves – 4 PCs.
- Black pepper (ground) – 1/4 tsp.
- Green onion (sliced) – 4 stalks
- Bouillon cube – 1/2 PC. (classic flavor)
- Extra virgin olive oil – 3 tbsp.
Directions:
- Heat a large pan and add extra virgin olive oil.
- Sauté ginger and after 1 minute add garlic, lemongrass, Kaffir Lime leaves and stir for 1 minute or until garlic is slightly golden brown.
- Add mussels, coconut milk, ground pepper, chili and bouillon cube.
- Simmer until mussels are cooked, stirring occasionally.
- Add green onion for garnishing and serve.
