MAMA SITA’s SERIES – PORK, CHICKEN and BANGUS TOCINO

Preparation time: 25 min (plus marinate time)
Servings: 4 for each kind of dish
Calories per serving: 215 kcal
Ingredients:
- Mama Sita’s Tocino marinade mix – 2 ½ pouches
- Pork belly – 500 g (1.10 lb.)
- Chicken chunks – 500 g (1.10 lb.)
- Boned Bangus (Milkfish) – 1 PC. about 300 g (10.58 oz.)
- Cooking oil – ¼ cup
Directions (easy method):
- Coat the meat with Mama Sita’s Tocino marinade mix, 1 pouch for the pork, 1 for the chicken and half for the Bangus
- Marinate for thirty minutes or to taste in the refrigerator
- Heat ¼ cup cooking oil in a large pan and pan fry the meat few pieces at a time until meat has a shiny reddish-brown colour
Directions (traditional method):
- Coat the meat with Mama Sita’s Tocino marinade mix, 1 pouch for the pork, 1 for the chicken and half for the Bangus
- Marinate for thirty minutes or to taste in the refrigerator
- Place all the meat (one kind at time) in a large pan and cover with cold water
- Bring to a boil then lower the heat and simmer until water dries up and meat starts to sizzle
- Increase heat and cook until meat has a shiny reddish-brown color
